José "Pepe" Mercado spent 35 years mastering the food truck trade in Los Angeles. When his daughters Priscilla and Yaneva left the corporate world, they carried forward a recipe that began with Abuelita Carmen's kitchen in Guadalajara — slow-cooked birria de res, the way it's meant to taste.
In doing so, they created something LA had never seen: the city's first bone marrow taco truck.
